Stuffed Virginia Vine Leaves Recipe for Iftar

It’s simple and easy to make and something the whole family can enjoy.

Ingredients:
500g of Virginia vine leaves
1½ cup of washed rice
1 cup of chopped parsley
½ cup of chopped mint leaves
4 small chopped tomatoes
4 chopped spring onions
½ cup of olive oil
¾ cup of lemon juice
2 potatoes (sliced)
Salt and pepper to taste

METHOD

Firstly dip the Virginia vine leaves in boiling water for 1 minute, remove and set aside. Combine the rice, herbs, onions, tomatoes, lemon juice, oil, salt and pepper into a bowl and mix. Select one vine leaf at a time and place onto a board. Put approximately 1tsp of mixture on to each leaf, fold the sides and then roll into a small parcel. Repeat until you have used all of the stuffing. Place the sliced potatoes into the bottom of a saucepan, then add the stuffed vine leaves on top. Cover with water. Use a plate as a lid to prevent the vine leaves from opening and spilling out. Cook on low heat for approximately 1 hour or until the leaves are well cooked. Cool them and serve cold.
