Savoury Tuna Pancakes Recipe

For this recipe you will need the followed Ingredients:
300g of potatoes (boiled with the skin left on and chilled)
1 can of Virginia tuna in sunflower oil (drained and flaked)
1/2 cup sweetcorn
2 spring onions (chopped)
lemon zest (from 1 lemon)
1/2 cup breadcrumbs
Salt and freshly ground black pepper
2 tbsp. olive oil
1/2 cup breadcrumbs, for coating
Place the potatoes into a large bowl and mash using a potato masher, add the tuna flakes and mix together using a fork. Add the sweetcorn, chopped onions, egg and 1/2 cup of breadcrumbs and mix together. Finally add the lemon zest and season the mixture with salt and pepper. Stir the ingredients well.
Now divide the mixture into 12 individual portions. Shape them into patties. Place the remaining 1/2 cup of breadcrumbs on a plate and coat the patties with them.
Add the oil to a nonstick pan and heat over medium high heat. Cook each pancake for about 3 minutes on each side until golden brown. Once cooked transfer them to a plate lined with paper towel to remove any excess oil. Clean the pan with a paper towel and repeat until each pancake is cooked through.
They are now ready to eat and enjoy! Serve with your favourite salad and sauce or dressing.
