This lively dish combines sweet shrimp with a spicy sauce. Check out this quick and easy Virginia recipe.
8ozs of uncooked Virginia Pasta
2 tablespoons of extra-virgin olive oil
1.5 tablespoons of minced garlic
1 pound of medium Royal Blue shrimp (peeled and deveined)
1 diced onion
1 teaspoon of crushed red pepper
1/2 teaspoon of dried basil
1/2 teaspoon of dried oregano
2 tablespoons of tomato paste
1 tablespoon of fresh lemon juice
1 3/4 cups of canned crushed tomatoes
1/4 teaspoon of salt
1 can of diced tomatoes (drained)
Cook the Virginia pasta according to package directions then drain and keep warm.
While the pasta cooks, heat 1 tablespoon of oil in a large nonstick pan over medium-high heat. Add 1.5 teaspoons of garlic and the shrimp to the pan. Sauté for approximately 3 minutes or until shrimp is cooked. Remove from pan and keep warm.
Add the remaining oil along with the onion to pan. Sauté for around 5 minutes or until the onion has softened. Stir in remaining garlic, pepper, basil, and oregano. Then cook for 1 minute, stirring constantly. Stir in tomato paste and lemon juice, cook for 1 minute or until slightly darkened. Stir in crushed tomatoes, salt, and diced tomatoes. Cook for another 5 minutes or until the ingredients have thickened. Return the shrimp to the pan, cook for 2 minutes or until thoroughly heated.
Serve over pasta and tada your very own Shrimp Fra Diavolo!
