Royal Blue Fish Fillets with Mango and Avocado Salsa

For the perfect quick weeknight meal, that’s light, colourful and packed with flavour. Try our Royal Blue fish fillets with a side of mango and avocado salsa. The fresh salsa complements pretty much any white fish and can also be made as a dip for chips or would taste amazing on fish tacos.
Ingredients
1 medium ripe avocado, peeled (dice into 1/2 inch pieces)
1 medium ripe mango, peeled (dice into 1/2 inch pieces)
1 cup of cherry tomatoes, quartered
4 large fresh basil leaves, thinly sliced
3 tablespoons extra-virgin olive oil, divided (plus a little more for brushing)
3 tablespoons fresh lime juice, divided
Salt and freshly ground black pepper
4 Royal Blue white fish fillets
4 lime wedges
Method
Gently combine the avocado, mango, tomatoes, basil, 1 tablespoon of oil, and 1 tablespoon of lime juice in a large mixing bowl. Season to taste with salt and pepper and set aside at room temperature, gently tossing occasionally.
Place Royal Blue fish fillets into a large glass baking dish. Drizzle 2 tablespoons of oil and 2 tablespoons of lime juice over the fillets and season with salt and pepper. Let the fish marinate at room temperature for 10 minutes, turning occasionally.
Heat a grill to medium-high temperature and brush the grill rack with oil. Grill the fish fillets for approximately 5 minutes per side or until just opaque in centre. Then transfer to plates.
Spoon the mango and avocado salsa over the fish fillets and squeeze a lime wedge over each. Now serve and enjoy!
