This Ramadan, why not spend Iftar at home with friends and family and enjoy home cooked Chicken Korma with Shehrazade rice. The recipe is easy to follow and doesn’t require much effort!


1 chopped onion

2 garlic cloves, roughly chopped

roughly chopped thumb-sized piece of ginger

4 tbsp of korma paste

4 skinless, boneless chicken breasts (cut into bite-sized pieces)

50g of ground almonds

4 tbsp of sultanas

400ml of chicken stock

¼ tsp of golden caster sugar

150g pot of Greek yogurt

small bunch of chopped coriander


Place the onion, garlic and ginger in a blender and whizz until a paste is formed. Pour the paste into a large high-sided frying pan and add 3 tbsp water. Cook for 5 mins, then add the korma paste and cook for a further 2 minutes. 

Stir the chicken into the sauce, then add the almonds, sultanas, chicken stock and sugar. Give everything a good mix, then cover and simmer for 10 minutes or until the chicken is cooked through.

Remove the pan from the heat, stir in the yogurt and some seasoning, then scatter over the coriander.

Serve with Shehrazade basmati rice.
